Kopi Luwak
KOPI LUWAK

As the name suggests, Kopi Luwak is a special kind of coffee available at Gourmand Deli, utilizing a signature process with coffee beans that have been eaten and digested by an animal called luwak, also known as civet. Originally hailing from the Indonesian islands of Sumatra and Java, this species of civet traditionally thrives on chicken for protein and also feasts on tropical fruits such as banana, papaya and coffee bean.

During coffee season, the selective civet seeks out soft, sweet smelling coffee beans, tending to choose only the best of 30% of the 100kg amount of coffee fed to them. Very interestingly, the cat-like animal only chews on some of the outer sweet layers of the bean, while the rest of the bean stays intact in its stomach during a 12-hour fermentation period in a perfect 26-degree Celsius internal climate, where the beans are well blended with enzymes created by other foods consumed. The beans are then expelled during excretion on a dry and clean surface, the naturally instinctive choice of the civet.

The coffee beans then go through a thorough process of washing, sun drying, selection, roasting and testing, resulting in the final Kopi Luwak with a light but distinctive aroma that awards the palate with a refined taste; often referred to as the ‘champagne of coffees’.
